Ingredients
Serves: 6- 8 links fresh chicken sausages
- 1/4 cup olive oil
- 1 (1 pound) package frozen shredded potatoes
- 2 green bell peppers, seeded and thinly sliced
- 2 red bell peppers, seeded and thinly sliced
- 1 large onion, quartered and sliced
- Salt and pepper
- 1 (32 ounce) container chicken broth
- 1 (28 ounce) can crushed or diced tomatoes
Preparation method
Prep: 10 mins | Cook: 30 mins1. Preheat oven to 425 degrees F.
2. Combine sausages, 1 tablespoon olive oil, and enough water to make a 1/2-inch layer in a skillet. Place over medium-high heat and bring to a boil.
3. Cook the sausages for about 20 minutes, until no longer pink inside and browned outside. Slice.
4. Meanwhile, pour 3 tablespoons olive oil into a soup pot and place over medium-high heat. Cook potatoes, bell peppers, and onion in hot oil for 5 minutes, sprinkling with salt and pepper to taste.
5. Add broth and tomatoes to the soup pot. Bring to a boil, then simmer on low for 12 minutes to cook vegetables. Add sausage, heat through, and serve.
