English Walnut Cake recipe
Ingredients
400 g | sugar |
115 g | butter |
180 ml | milk |
300 g | flour |
5 medium | eggs |
3 tsp | baking powder |
1 tsp | vanilla extract |
450 g | English walnuts |
For the Frosting: | |
330 g | granulated sugar |
4 medium | eggs, whites only |
120 ml | water |
½ tsp | cream of tartar |
1 tsp | vanilla extract |
Instructions
Preheat oven to 180°C.
In a bowl, combine half of the walnuts with 50 g flour; set aside. Use remaining half for garnishing.
In another bowl mix together butter and sugar. Add eggs, one at a time, beating well after each addition. Add vanilla extract and mix again.
Combine the baking powder and remaining flour. Add to the creamed mixture alternately with milk. Stir in the reserved nut mixture.
Transfer to a greased tube pan. Bake for 50-55 minutes. Cool for 10 minutes before removing from pan.
Frosting:
In a heavy saucepan, combine sugar, egg whites, water and cream of tartar. Beat on low speed for 1 minute and continue beating over low heat for about 8-10 minutes.
Pour into a bowl and add vanilla. Beat on high speed until frosting becomes stiff, about 5-7 minutes. Frost the cake and use the remaining walnuts for garnish.
