Ingredients
1 | cucumber |
1 loaf(s) | white bread, thinly sliced |
½ lb | butter, preferably unsalted |
salt and pepper, to taste |
Instructions
Allow the butter to come up to room temperature so it is softened for spreading.Peel the cucumber, in stripes so that there is white and green showing.
Using a very sharp knife, slice the cucumber into thin slices and spread in on a wire rack. Sprinkle lightly with salt and leave for the water to drain away. After 15 to 30 minutes, pat with a clean tea towel to remove the salt and water.
Spread the butter on the bread lightly, buttering right to the edges. Layer the cucumber, slightly overlapping on each slice of bread and sprinkle with a little salt and pepper. Place a further buttered slice of bread on top.
Remove the crusts on all four sides of each sandwich and then halve each one, and then cut into three equal fingers per half
Place on a plate covered with a paper doilie and serve with tea and a mixture of other sandwiches, scones and small cakes.
Variation:
Note that some people mix brown and white bread either so each sandwich has one brown and one white component or a mixture of brown bread sandwiches mixed in with the white.
