Ingredients
Serves: 6- 1 1/2 cups enchilada sauce
- 1 garlic clove, minced
- 1 teaspoon onion powder
- 1/2 teaspoon pepper
- 1/4 teaspoon ground coriander
- 1/8 teaspoon ground cumin
- 3 cups frozen cubed hash browns, thawed
- 1 1/4 cups shredded Monterey Jack cheese
- 1 cup cubed fully cooked ham
- 1 cup canned black beans, rinsed and drained
- 1 (4 ounce) can chopped green chiles
Preparation method
Prep: 15 mins | Cook: 45 mins1. Preheat oven to 350 degrees F and coat an 8-inch square baking dish with nonstick cooking spray.
2. Stir enchilada sauce into garlic, onion powder, pepper, coriander, and cumin in a big bowl. Toss with potatoes, 1 cup cheese, ham, beans, and chiles, then pour into prepared baking dish. Top with 1/4 cup cheese.
3. Cover the casserole with foil and bake for 30 minutes. Then remove foil and bake for another 15 minutes; remove from oven and let the casserole rest for 10 minutes before slicing and serving.
