Empanadas with chorizo and cheese recipe details
Ingredients
225 g | puff pastry |
125 g | chorizo, diced |
60 g | freshly grated Manchego cheese |
1 | egg |
1 tsp | paprika powder |

Instructions
In a bowl, mix together the chorizo and the cheese.Roll out the pastry on a floured surface. With a glass, cut out pastry rounds until all the pastry is used up.
Break the egg into a small bowl and whisk with a fork. Place in the middle of each pastry round a spoonful of the chorizo and cheese mixture. Fold over the pastry and firmly press the edges together. Brush the empanadas with the egg from both sides.
Preheat the oven to 220°C. Place the empanadas onto a lined baking tray. Sprinkle with paprika powder. Bake for 15-20 minutes until golden brown. Allow to cool for 5 minutes.
Dust again with paprika powder before serving.
