Eggs with mustard and bacon sauce recipe details
Ingredients
1 kg | potatoes, peeled and halved |
30 g | smoked bacon, diced |
200 g | single cream |
8 | hard boiled eggs, peeled and halved |
1 bunch(es) | chives, chopped |
3 sprig(s) | parsley, chopped |
1 bunch(es) | cress, chopped |
25 g | soft butter |
salt and freshly ground black pepper | |
30 g | flour |
400 ml | vegetable stock |
1 dash(es) | sugar |
3 tbsp | mustard |
Instructions
Cook the potatoes in salted water until done. Drain. In a pan, fry the bacon until crispy. Remove from the pan and set aside.Melt the butter in the pan, add the flour and cook stirring until pale yellow. Pour in the stock and the cream and bring to a boil, stirring constantly with a wire whisk. Simmer over low heat for approximately 10 minutes. Season to taste with mustard, salt, pepper and sugar. Stir in the bacon, parsley, half of the chives and cress and keep warm.
Divide the eggs and potatoes on the plates. Pour over generously the sauce. Serve sprinkled with the remaining chives and cress.
