A simple Venezuelan breakfast I fell in love with when I was in Mérida last year. When I didn’t find a recipe on this site, I decided to figure it out for myself. Yum!

Ingredients
Serves: 1- 1 tablespoon corn oil
- 1/2 small cooking onion, chopped
- 1 teaspoon chopped garlic
- 3 eggs, lightly beaten
- 1 Roma tomato, diced
- Salt & pepper to taste
Preparation method
Prep: 5 mins | Cook: 5 mins1. Heat corn oil in skillet on medium heat. Cook and stir the onions and garlic until soft. Add eggs, tomato, salt and pepper. Stir constantly until eggs are cooked. Remove from heat and serve immediately.
