Eggs on a bed of vegetables recipe details
Ingredients
300 g | potatoes, peeled and cut into small cubes |
6 | spring onions, cut into thin rolls |
3 clove(s) | garlic, chopped |
1 | capsicum, red, cut into small cubes |
1 medium | zucchini, cut into small cubes |
250 g | chorizo, cut into small cubes |
200 g | ham, cut into small cubes |
2 large | tomatoes, peeled and cut into small cubes |
200 g | peas |
8 | eggs |
6 tbsp | olive oil |
salt and pepper |
Instructions
Preheat oven to 180°C.Heat olive oil and fry potato cubes until golden brown. Add spring onions, garlic, capsicum, zucchini, chorizo and ham and fry for 15 minutes, stirring occasionally. Add tomatoes and peas, season with salt and pepper and cook for a further 3 minutes.
Grease a flat ovenproof casserole dish and transfer vegetable mixture into it. With a large spoon form 8 troughs into the vegetables mix and slide an egg into each trough and season the eggs with salt and pepper. Transfer casserole into oven and bake for 12 minutes.
