Eggs gone bananas recipe details
- Ingredients
- Vidalia onions (about 1/4 cup)
- Mushrooms (about 1/4 cup)
- Sweet red pepper (about 1/4 cup)
- Butter
- Cooking oil
- Dill to taste
- Salt and pepper to taste
- Garlic to taste
- 3 eggs, beaten
- 1 Tablespoon honey
- 1 cup sweet coconut
- 1 banana
- 1/2 cup shredded cheddar cheese
- Shredded sweet coconut
- 1 banana
Saute onions, mushrooms, sweet red pepper with butter and cooking oil. Season with dill, pepper, salt, and garlic.
In regular or special folding omelet pan, cover inside cover with cooking oil and add butter. Heat on low. Add 3 beaten eggs, keeping on low heat, and cover until almost firm. Add sauteed onions, mushrooms, and sweet peppers on one side of eggs. Add shredded cheddar cheese and fold eggs over. Cover and keep on low heat for one minute.
In a separate large pan, add 1/2 cup cooking oil and 1 Tablespoon of honey over medium heat. Cover mixture with sweet coconut. Thickly slice banana and place it into pan. When coconut starts to brown, flip bananas to the other side. In five minutes, take out of pan and serve next to the omelet.
