Eggplant cordon bleu recipe details
Ingredients
1 | eggplant, long |
50 g | ham |
1 | tomato |
100 g | cream cheese, with herbs (or sliced Mozzarella) |
1 | egg |
breadcrumbs | |
oil for frying |
Instructions
Cut the eggplant into 4 thin slices. Layer two slices with ham, cheese, sliced tomato and cream cheese. Cover with the two other eggplant slices and press together slightly to make them stick together.Turn first in beaten egg and then in breadcrumbs and fry in the hot oil until golden brown on both sides.
