Egg lemon soup recipe details
Ingredients
1 l | vegetable broth |
100 g | rice |
1 medium | egg |
2 medium | eggs, yolks only |
60 ml | lemon juice |
2 tbsp | parsley |
Instructions
Bring the stock to a boil, add rice, cover, and cook until tender, 30-40 minutes.Beat the eggs and yolks until light and fluffy, then add lemon juice and about 150ml of stock.
Combine the egg lemon mixture with the rice and continue to cook until rice is done. Stir in parsley, and serve.
