Ready in: 55 mins
Ingredients
Serves: 4- 2 (5 ounce) boneless pork loin chops
- 1 to 3 teaspoons black pepper
- 1 tablespoon olive oil
- 4 shallots, chopped
- 1 cup beef broth
- 1/2 cup white wine
- 2 tablespoons Dijon mustard
Preparation method
Prep: 25 mins | Cook: 30 mins1. Rub pork chops with black pepper. Pour olive oil into a large skillet and set over medium-high heat. Place pork chops in skillet and cook just to brown on both sides, then move to a plate and cover with foil.
2. Add shallots to the skillet and cook for 5 minutes to soften. Stir in broth and wine. When mixture comes to a boil, set the pork chops back in the skillet.
3. Turn heat down to low and place a lid on the pan. Cook for another 8 to 10 minutes, until pork reaches an internal temperature of at least 145 degrees F. Transfer to a plate and cover with foil again.
4. Add mustard to the cooking juices. Cook for about 15 minutes, until sauce thickens. Serve spooned over the pork chops.Tip
Ask in the wine section for a dry white. (Even within different types of white wine, there are dry and less dry bottles.) The better the wine you use, the better this dish will be.
