A quick and easy tasty tofu curry to tempt an appetite seeking Thai influences. Serve over steamed jasmine rice and garnish with cashew nuts and spring onions.

Ingredients
Serves: 4- 2 tablespoons bought green curry paste
- I can coconut milk
- 1 cup liquid chicken stock
- 1 packet firm tofu
- 2 teaspoons fish sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon sugar
- cashew nuts
- chopped spring onions
Preparation method
Prep: 10 mins | Cook: 10 mins1. Chop tofu into bite-sized cubes.
2. Combine all ingredients except nuts and onions in one pan and bring to boil.
