Serves: 1- 2 teaspoons olive oil
- 1/4 cup frozen chopped spinach, thawed and squeezed dry
- 1/2 tomato, seeded and chopped
- 1/4 red or green bell pepper, seeded and chopped
- 1 egg
Preparation method
Prep: 5 mins | Cook: 5 mins1. Pour olive oil into a nonstick skillet and place over medium heat. Cook spinach, tomato, and bell pepper in hot oil and cook for 3 minutes, then crack the egg into the skillet and break up with the spatula.
