Ingredients
Serves: 8- 3 tablespoons unsalted butter
- 3/4 pound Spanish cooked chorizo, sliced at a 45-degree angle
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 14 eggs, beaten
- 8 (10-inch) flour tortillas
- 1/2 pound shredded Cheddar cheese
- 1/2 cup chopped cilantro
- Salsa
Preparation method
Prep: 20 mins | Cook: 15 mins1. Melt butter in a skillet over medium heat. Cook chorizo in melted butter for about 5 minutes until crisp. Stir in onion and garlic; cook for another 5 minutes, until tender.
2. Add eggs to the skillet. Cook, breaking up into small pieces, until set.
3. Fill each tortilla with egg chorizo mixture, cheese, and cilantro. Roll up and serve with salsa.
