Quick, healthy, filling pork and asparagus. Two glasses of wine go in the pan; drink the other two.
Ready in: 45 mins

Ingredients

Serves: 2
  • 1 pound asparagus, trimmed
  • 3 thin-cut boneless pork chops
  • 1 bottle Chilean Malbec wine
  • 1/4 cup coarse Dijon mustard

Preparation method

Prep: 10 mins | Cook: 35 mins

1. Pour a glass of wine (about 1 cup) into a large skillet, then add mustard and asparagus. Cook over medium-low until wine is evaporated, turning asparagus once, about 15 minutes.
2. Remove asparagus and pour in a second glass of wine. Add pork chops and cook over medium heat until the second glass of wine has evaporated and the pork is cooked through, turning once, about 20 minutes.
