Ingredients
Serves: 6- 1 pound boneless, skinless chicken breasts, cubed
- 1 tablespoon olive oil
- 2 (14 ounce) cans diced tomatoes, rinsed and drained
- 2 cups frozen corn
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (14 ounce) can chicken broth
- 1 (4 ounce) can chopped green chiles
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- Salt and cayenne pepper, to taste
Preparation method
Prep: 15 mins | Cook: 6 hours1. Snag a skillet, pour the oil in and heat until hot. Add the cubed chicken and cook until the meat is browned on all sides. Should take about 8 minutes. Stir plenty, so the chicken doesn’t stick to the skillet. Put the browned chicken in a slow cooker.
2. Toss in the rest of the ingredients. Cook on Low for 6 hours.
