Easy Peas-y Beef Stew

Red wine gives a hearty flavor and good color to this basic beef stew you make in a Dutch oven.

Ingredients
Serves: 6
- 1/4 cup flour
- Salt and pepper
- 2 pounds beef stew meat
- 2 tablespoons vegetable oil
- 2 yellow onions, chopped
- 2 cloves garlic, minced
- 4 cups beef stock
- 1 cup red wine
- 4 potatoes, cubed
- 2 large carrots, cut into 1-inch pieces
- 1/2 cup frozen green peas
Preparation method
Prep: 20 mins | Cook: 2 hours
1. In a shallow pie pan, season the flour with salt and pepper. Dredge stew meat in flour mixture. Heat vegetable oil in Dutch oven over medium heat and cook the beef in the hot oil until browned on all sides, about 6 minutes per batch. Remove beef from pan.
2. Saute onions and garlic in the Dutch oven. Add stock and wine, then return beef to the pan with potatoes and carrots. Bring to a boil and simmer on low for 2 hours. Add peas in the last 5 minutes of cooking.
