Ingredients
Serves: 4- 1/4 cup flour
- Salt and pepper
- 1 pound turkey breast cutlets
- 2 tablespoons olive oil
- 1/2 cup chicken broth
- 3 tablespoons butter
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh parsley
- 1 tablespoon capers
Preparation method
Prep: 10 mins | Cook: 15 mins1. Whisk together the flour, salt, and pepper in a shallow dish. Dredge turkey cutlets in flour mixture.
2. Heat oil in large skillet and fry dredged turkey cutlets in hot oil for about 6 minutes, turning once, until meat is no longer pink in the middle. Remove from pan.
3. When all cutlets are cooked, pour chicken broth into skillet and simmer over medium heat until liquid has reduced by half.
4. Add butter and lemon juice to reduced chicken broth, cooking just until butter is melted. Remove from heat, add parsley and capers, and serve over turkey.
