Easy mutton stew recipe details
Your basic “chuck it in the pot” stew. Adapted from the 1910 Manual for Army Cooks.
Ready in: 2 hours 5 mins
Ingredients
Serves: 6- 1 1/2 pounds mutton stew meat, cut in 1-inch pieces
- 5 cups beef stock
- 2 pounds potatoes, diced
- 1 onion, quartered
- Salt and pepper, to taste
- 2 tablespoons cornstarch
- 1/4 cup water
Preparation method
Prep: 15 mins | Cook: 1 hour 50 mins1. Place mutton in a soup pot and add enough beef stock to cover. Bring to a boil over medium heat, then simmer, covered, on low for 1 1/2 hours.
2. Add potatoes and onion to pot and continue to simmer for 20 minutes, or until potatoes are tender. Season with salt and pepper to taste.
3. In a small bowl, whisk cornstarch and water together. Gradually add to the simmering stew and continue to simmer until thickened to your liking.
