Ingredients
Serves: 4- 1 lemon
- 4 chicken leg quarters
- 1 tablespoon extra virgin olive oil
- Salt and pepper
- 1 tablespoon chopped fresh tarragon
Preparation method
Prep: 10 mins | Cook: 35 mins1. Preheat oven to 425 degrees F. Slice half of the lemon into thin pieces; place in the bottom of a roasting pan in a line down the middle.
2. Coat chicken with oil and sprinkle with salt and pepper. Set on the lemon slices.
3. Roast for 35 minutes, until chicken reaches an internal temperature of 160 degrees F (juices run clear when chicken is cut near bone.)
4. Squeeze the juice from second lemon half over chicken, sprinkle with tarragon, and serve.
