Ingredients
Serves: 8- 1/2 cup olive oil
- 1/3 cup lime juice
- 2 tablespoons minced garlic
- 2 tablespoons minced fresh ginger
- 2 tablespoons soy sauce
- 2 teaspoons Dijon mustard
- 1/4 tsp cayenne pepper
- 4 (3/4 pound) pork tenderloins
Preparation method
Prep: 10 mins | Cook: 30 mins | Extra time: 4 hours, marinating1. Pulse olive oil, lime juice, garlic, ginger, soy sauce, mustard, and cayenne pepper together in a food processor until smooth. Pour into two large plastic resealable bags.
2. Divide pork between the plastic bags, seal, and refrigerate for 1 hour to marinate. Drain.
3. Preheat grill for medium-high indirect heat and lightly oil grate. If using wood chips, try apple.
4. Set the pork on the grill, close the lid, and cook for about 30 minutes, until pork reaches an internal temperature of 160 degrees F. Turn once midway through cooking.
