Ingredients
Serves: 4- 9 ounces dried rice vermicelli noodles
- Boiling water
- 8 1/2 cups chicken stock
- 2 boneless, skinless chicken breasts, sliced as thin as you can
- 1/2 cup chopped mint
- 1/2 cup chopped cilantro
- 1/2 cup Thai basil leaves
- 1 1/2 cups bean sprouts
- 1 lime, cut into wedges
- Sriracha or other hot sauce, to taste
Preparation method
Prep: 15 mins | Cook: 10 mins1. Cover the rice noodles with boiling water in a bowl. Let stand for 5 minutes, or until softened. Drain.
2. Bring chicken stock to boil over high heat in a saucepan. Turn heat down to low, add chicken, and cook for about 2 minutes to poach. Remove chicken from the broth.
3. Distribute chicken and noodles among four individual soup bowls. Pour chicken broth over the mixture, then top with mint, cilantro, basil, bean sprouts, and lime as desired.
