Easy cheapy quickie spasagna recipe details
This is a combination of meat sauce spaghetti made like lasagna. My kids love it and it is simpler than lasagna. So my son named it Easy Cheapy Quickie Spasagna. It also works well with macaroni or ziti. This recipe is perfect for vacuum packaging individual portions and freezing them for leftover night.

Ingredients
Serves: 6- 1 pound spaghetti
- 1 large onion, diced
- 2 tablespoon olive oil
- 1 (8 ounce) package sliced mushrooms
- 1 1/2 pounds 95% fat free ground beef
- 1 (24 ounce) jar spaghetti sauce
- 1/2 cup Pinot Noir wine
- 1 (1 pound) package sliced mozzarella cheese
- 1 teaspoon dried parsley, or to taste
- 1/2 teaspoon paprika, or to taste
- 1/4 cup grated Parmesan cheese
Preparation method
Prep: 20 mins | Cook: 40 mins1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking pan.
2. Bring a large pot of water to a boil and cook spaghetti according to package directions.
3. In another large pot cook the onion in the olive oil until translucent. Add the sliced mushrooms and cook until tender. Add the ground beef; cook and stir until the beef is evenly browned. Stir in the spaghetti sauce and the wine, and simmer to reduce the liquid. Drain the spaghetti and add to the sauce mixture.
4. Spread the mixture into the prepared pan. Place slices of mozzarella cheese to cover completely. Sprinkle with parsley and paprika.
5. Bake in the preheated oven until sauce is thickened, about 1/2 hour. Cool for 15 minutes before cutting into portions.
