Easy beefy bacon and corn chowder recipe details

Ingredients
Serves: 5- 7 1/2 cups frozen corn, thawed
- 1 cup whole milk
- 10 slices bacon, chopped
- 1 onion, diced
- 8 ounces ground beef
- 2 red bell peppers, diced
- 2 Russet potatoes, diced
- 3 cups chicken broth
- Salt and pepper, to taste
Preparation method
Prep: 10 mins | Cook: 30 mins1. Pulse 6 cups of corn with the milk in a food processor until combined.
2. Place bacon in a large Dutch oven and set over medium heat. Cook for about 6 minutes, then stir in ground beef and onion. Cook for another 7 minutes or so to brown.
3. Stir in red peppers and potatoes. Cook for about 5 minutes, then pour the chicken broth into the Dutch oven. When the broth boils, turn heat down to low and cover the pot. Cook for about 10 minutes, until potatoes are soft.
4. Stir in pureed corn mixture and remaining corn. Season with salt and pepper. Heat through.
