Ingredients
Serves: 4- 2 tablespoons butter
- 5 yellow onions, thinly sliced
- 2 tablespoons sugar
- 3 1/2 cups beef stock
- 5 cups water
- 1/4 cup brandy
- 1/2 teaspoon salt
- 1/2 teaspoon ground pepper
- 4 (1/2-inch thick) toasted slices French bread
- 4 tablespoons shredded Gruyere cheese
Preparation method
Prep: 10 mins | Cook: 45 mins1. Preheat oven to 400 degrees F.
2. Melt butter in a large Dutch oven set over medium-high heat. Add onions and sprinkle with sugar; cook in melted butter for about 10 minutes to brown lightly, then turn heat down to medium-low and saute for 10 more minutes. Onions will be deep brown.
3. Stir in beef stock and water. When liquid boils, simmer for about 20 minutes. Add brandy to the soup and season with salt and pepper to taste.
4. Ladle piping hot soup into 4 large ovensafe bowls. Top each with a slice of toast and sprinkle with cheese. Set on a baking sheet.
5. Bake about 5 minutes, until cheese melts. Serve.
