Dutch Apple Pancake recipe

- Ingredients:
- 4 eggs, beaten
- 3/4 cup milk
- 3/4 cup flour
- 1 Tablespoon sugar
- 1/2 teaspoon salt
- 2 Tablespoons butter
- 5 apples pared, cored and sliced
- 2/3 cup sugar
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 Tablespoon lemon juice
- 1 Tablespoon grated lemon peel
- 2 Tablespoons butter
Combine eggs, flour, sugar, and salt. Batter will be thick and slightly lumpy. Melt butter in a round pie plate. Spoon batter into dish and bake at 425 degrees for 12 to 15 minutes or until set and browned. Do not open oven during baking.
Mix apples, sugar, cinnamon, nutmeg, lemon juice, and lemon peel. Toss to coat apples. Dot with butter and microwave on HIGH until apples are soft, 3 to 5 minutes. Stir occasionally. Spoon hot apple mixture over the top of pancake. Cut pancake into wedges to serve. Sprinkle with powdered sugar and top with sour cream or whipped cream.
