Ingredients

1 piece(s) onion chopped
1 tsp each ginger, garlic, chilli, curry
1 tsp each ground cumin, ground coriander, chili powder, salt
2 large ripe tomatoes, skinned and finely chopped
1 large can(s) baked beans (410g)
1 piece(s) loaf white bread, unsliced
1 bunch(es) fresh coriander, finely chopped, (handful)

Instructions

Brown the onion in a saucepan and add the ginger, garlic, chilli, curry, cumin, coriander, chilli powder and salt. Let the spices cook with the onions for a few minutes until golden. Add the tomatoes and beans. Lower the heat, cover and simmer for 15 minutes.

Cut loaf in half width-wise and pull out the soft part inside, leaving a 1cm crust shell. Fill with the bean curry and garnish with fresh coriander. Eat with your hands, preferably sitting at the beach around a big open fire.
