Durban bunny chow recipe details
Ingredients
1 piece(s) | onion chopped |
1 tsp | each ginger, garlic, chilli, curry |
1 tsp | each ground cumin, ground coriander, chili powder, salt |
2 large | ripe tomatoes, skinned and finely chopped |
1 large can(s) | baked beans (410g) |
1 piece(s) | loaf white bread, unsliced |
1 bunch(es) | fresh coriander, finely chopped, (handful) |
Instructions
Brown the onion in a saucepan and add the ginger, garlic, chilli, curry, cumin, coriander, chilli powder and salt. Let the spices cook with the onions for a few minutes until golden. Add the tomatoes and beans. Lower the heat, cover and simmer for 15 minutes.Cut loaf in half width-wise and pull out the soft part inside, leaving a 1cm crust shell. Fill with the bean curry and garnish with fresh coriander. Eat with your hands, preferably sitting at the beach around a big open fire.
