Dundee cake recipe details
Ingredients
450 g | raisins |
170 ml | Scotch whisky and 3 tbsp extra |
100 g | candied lemon peel |
100 g | candied orange peel |
100 g | chopped dried cherries |
200 g | ground almonds |
200 g | soft butter |
180 g | brown sugar |
1 | orange |
1 | lemon, grated peel |
1 pack(s) | vanilla sugar |
1 pinch(es) | cinnamon |
1 pinch(es) | ground cardamom |
1 pinch(es) | ground coriander |
1 pinch(es) | ground mace |
½ tsp | salt |
5 medium | eggs |
150 g | flour, sieved |
1 tsp | baking powder |
150 g | almonds, blanched and peeled |
250 g | orange marmalade |
Instructions
In a small saucepan, cover the raisins with 120ml of the whisky and heat to lukewarm. Leave to soak overnight.In a bowl, whisk the butter with sugar and vanilla sugar and a pinch of salt until creamy. Add orange and lemon peel and the eggs, one at a time. With each egg add also 1 tablespoon of flour. Stir in the candied peels, chopped cherries and all the spices and stir until well distributed. Add the remaining flour, baking powder, ground almonds and the raisins. Knead until well combined.
Fill the dough into a buttered springform tin. Bake in the preheated oven at 170°C for 25-30 minutes. Garnish the cake with the almonds and bake for another hour or until a skewer comes out clean.
In a saucepan, combine 120ml of the marmalade with 50ml of the whisky and heat stirring until smooth. Brush the cake with the mixture. Allow to cool. Combine the remaining marmalade and whisky and stir over low heat until smooth. Glaze the cake with the mixture.
