Dulce de leche ice cream recipe details
Ingredients
300 ml | milk |
3 | egg yolk |
80 g | brown sugar |
450 g | dulce de leche (spanish milk jam) |
300 ml | whipping cream |
Instructions
Heat the milk in a heavy pot but do not let it boil. Turn off the heat. In a bowl, mix the egg yolks with the sugar. Now slowly add the warm milk. Pour back into the pan and heat up slowly. Cook (but not boil!) for 10-15 minutes. Turn off the heat and add the dulce de leche. Mix well! Leave for 2 hours to cool but stir occasionally.Whisk the whipping cream and fold into the cold mixture. Freeze either in an ice cream maker or for 6 hours in the freezer – in the latter case stir every hour with a fork.
