Ingredients

800 g duck breast
1 kg tomatoes, sliced
100 g ham, diced
1 glass(es) dry white wine
8 tbsp olive oil
1 tsp tomato paste
1  onion, finely chopped
1  carrot, sliced
2 stalk(s) celery, chopped
4 leaves sage
5 leaves basil, chopped
1 bunch(es) parsley, chopped
salt and pepper

Instructions

In a large casserole heat the oil and sauté onions, carrot, celery, parsley, sage, ham and basil. Place the duck breasts into the casserole and cook over medium heat until browned from both sides.

Pour on the white wine and add the tomato paste and the tomatoes. Season with salt and pepper. Cover and cook over low heat for 40-50 minutes.

Remove the duck from the casserole and slice. Puree the sauce and return the duck slices into the sauce. Reheat for 2-3 minutes.

Serve with pasta or rice.
