Duck in guinness and honey recipe details
Ingredients
2 ½ kg | duck, washed, trussed |
2 tbsp | olive oil |
2 tbsp | honey |
1 tbsp | brown sugar |
240 ml | Guinness |
1 pinch(es) | nutmeg, ground |
300 ml | stock |
1 pinch(es) | salt and pepper, to taste |
Instructions
Preheat oven to 200°C.Brush duck with oil and cook in oven until browned, about 10-12 minutes.
Meanwhile, mix together honey, sugar, Guinness and spices in a saucepan and simmer for 10 minutes.
Add stock and continue cooking for another 15 minutes. Season to taste with salt and pepper.
Reduce heat to 150°C and cover the duck with the honey sauce. Roast for 60 to 75 minutes and baste occasionally with the sauce. When cooked through, remove from the oven and allow to rest for a few minutes before carving.
