Duck breast with red cabbage recipe details
Ingredients
750 g | red cabbage, shredded |
2 | onions, chopped |
2 tbsp | lard |
cinnamon | |
allspice | |
salt and freshly ground black pepper | |
2 | bay leaves |
2 | oranges, squeezed |
200 ml | vegetable stock |
400 g | duck breast |
½ stalk(s) | leek, sliced |
200 g | bacon, diced |
Instructions
In a saucepan melt the lard. Fry the cabbage and the onions for 4-5 minutes. Season to taste with the spices. Deglaze with the orange juice and the stock. Cover and simmer for 30 minutes.Crosswise score the skin of the duck breast with a sharp knife. Sear the duck breast skin side down until golden brown and crispy. Turn around and fry briefly. Season with salt and pepper. Transfer into a casserole dish and roast in the preheated oven at 175°C for 15 minutes.
In a pan fry the bacon until crispy. Add the leek and fry until golden. Stir into the cabbage and cook together with the cabbage for the last 15 minutes of the cooking time.
Wrap the duck breast into foil and allow to rest for a few minutes. Season to taste the cabbage.
Carve the duck breast diagonally and serve with the cabbage.
