Duchesse potatoes recipe details
Ingredients
1 ½ kg | potatoes |
200 g | butter |
1 large | egg |
3 large | eggs, yolks only |
salt, to taste | |
fresh ground pepper, to taste | |
grated nutmeg, to taste |
Instructions
Preheat oven to Gas Mark 4 or 5, 180-200°C, 350-375°F.Peel and cut the potatoes into small pieces and boil in a large pan of lightly salted water until tender. Drain and purée the potatoes with the butter in a blender or with a stick blender. Add the eggs and yolks and season with salt, pepper and nutmeg. Blend well.
If you have a piping bag, select a large swirl nozzle and pipe out rosettes of about 2-3 inches, 5-7.5cm in size onto a lightly greased baking dish.
In the absence of a piping bag, use either a small bonbon dish – only if shallow -, a tablespoon or even a foil muffin case provided it is not too deep. Level the measure with potato mix and invert on a lightly oiled baking tray. Using the prongs of a fork, create ridges lightly across the surface and bake in a warm oven until golden. The peaks may be permitted to darken further.
Serve with any meat or poultry dish, or with poached or grilled fish dishes with vegetables of choice.
