Dublin coddle recipe details
Ingredients
2 medium | onions, chopped |
4 | potatoes, about 6 ozs each, peeled and cut into quarters |
1 large | gammon steak, chopped into bite size pieces (or two small) |
4 | pork sausages |
½ pint(s) | chicken stock (use a cube) |
1 | butter |
4 | savoy cabbage or cavalo nero |
1 | parsley, chopped |
salt and freshly ground black pepper, to taste |
Instructions
Place the onions and potatoes in a heavy bottomed pan with a lid. Cut the gammon steak into pieces and add to the pan. Season generously with the black pepper and place the sausages on top. Pour in the stock and bring to the boil. When boiling, reduce the heat to a steady simmer, cover the pan, and cook for 45 minutes.Remove the lid and cook over medium heat vigorously for 10 minutes. Finely shred the chopped cabbage and add to the pan, and cook for five minutes or so further until the greens have wilted Stir in the parsley.
Season to taste and serve in soup bowls, with a knob of butter.
