Classic Irish comfort food. This potato and sausage (called “rashers” by the Irish) was a favorite of author Jonathan Swift. It’s no Lilliputian meal, though, not with 2 pounds of meat and 2 pounds of potatoes.

Ingredients

Serves: 6
  • 1 pound breakfast sausage links
  • 1 pound bacon, chopped coarsely
  • 3 large onions, chopped
  • 2 pounds potatoes, thinly sliced
  • 1/4 cup minced fresh parsley
  • Salt and black pepper, to taste
  • 1 cup milk
  • 2 tablespoons butter, chopped

Preparation method

Prep: 20 mins | Cook: 2 hours

1. Preheat oven to 350 degrees F. Coat a Dutch oven with nonstick cooking spray.
2. Brown the sausages in a skillet over medium heat. Drain on paper towels.
3. Place a layer of potatoes in the Dutch oven, top with layers of bacon, sausage, and onions, and sprinkle with parsley, salt, and pepper. Repeat layers until all the potatoes are gone (the top layer should be potatoes).
4. Pour milk over the potatoes and meats. Place the lid on the Dutch oven.
5. Bake for 90 minutes to 2 hours, until potatoes are tender. Remove the lid and sprinkle with butter, then bake for another 15 to 20 minutes to brown and to allow any remaining milk and liquid to bake off. Serve.
