Dolmas, also known as stuffed grape leaves, is a delicious and traditional Middle Eastern dish. The recipe involves filling tender grape leaves with a flavorful mixture of rice, herbs, and spices. These dolmas are then gently cooked until tender and served as a delightful appetizer or side dish. The combination of tangy grape leaves and aromatic stuffing creates a mouthwatering and satisfying culinary experience.

Ingredients

  1. Minced meat (Qeema) – ½ kg
  2. Rice – ½ cup
  3. Coriander leaves (hara dhania) – 25 grams
  4. Garlic – 1 tsp
  5. Onion – 2 tbsp
  6. Cabbage – ½ kg
  7. Salt and black pepper – to taste

Ingredients for tomato sauce

  1. Tomatoes – ½ kg
  2. Onion – 2tbsp
  3. Garlic – 1 tsp
  4. Thyme – ¼ tsp
  5. Oregano – ¼ tsp
  6. Oil – 2 tbsp
  7. Salt and black pepper powder – to taste

Instructions

  1. Mix minced meat, salt, black pepper powder, rice, onion, garlic and coriander leaves thoroughly in a bowl
  2. Cut the cabbage down half its length and then separate each leaf and wash
  3. Steam the leaves, blend tomatoes for tomato sauce
  4. Heat oil in a pot. Slightly fry tomatoes, onion and garlic
  5. Cook for a little while. Add thyme, oregano, salt and black pepper and cook until akk ingredients are blended
  6. Place spoonfuls on mince meat into cabbage leaves
  7. Fold and seal with the toothpicks
  8. Dip folded leaves in tomato sauce and cook over low flame for 10mins with the lid covered
  9. Garnish with remaining tomato sauce
