Diane's cheese souffle recipe details
- Ingredients
- 2 Tablespoons butter
- 2 Tablespoons flour
- 3/4 cup milk
- 4 egg yolks
- 6 egg whites
- 1-1/2 cups grated cheese
- Tabascopepper sauce or 1/4 teaspoon mild curry
Preheat oven to 375 degrees. Butter 8 cup souffle dishes. Melt butter in 4-cup glass measuring cup in microwave. Stir in flour with small whisk. Return to microwave and reheat. Gradually add milk and reheat, stirring frequently until it resembles a thick cream sauce. Add egg yolks one at a time, stirring well. Reheat in microwave until thickened, stirring frequently. Add cheese, and reheat, stirring until cheese melted and mixture thickened. Beat egg whites until stiff by not dry. Carefully fold in cheese sauce and transfer to souffle dish. Bake for 30 minutes and serve at once.
