Delicious Low-Sodium Red and Black Beans and Rice

If the Doc says heart-healthy, this is a great low-sodium side dish. Simple and fast to make, but very tasty and easily modified to your individual likes.

Ingredients
Serves: 8- 2 1/4 cups water
- 2 tablespoons unsalted butter
- 2 packets Herb Ox(R) sodium free bouillon
- 1 cup white rice
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 1/2 teaspoon chopped garlic
- 1/2 cup frozen peas and carrots
- 1/2-1 can black or red beans (drained)
- spices to taste (eg. Spike, Mrs. Dash, cayenne)
- 1 packet Splenda (only if you prefer a sweeter flavor)
- 1/2 teaspoon salt substitute
- 1/2 teaspoon coarse ground black pepper
Preparation method
Prep: 15 mins | Cook: 20 mins1. In medium saucepan, bring water to boil. Add butter, bouillon, and rice, stir, cover pan, reduce heat to simmer.
2. Cook 10 minutes.
3. Add celery, onion, garlic, frozen peas and carrots, drained beans, stir, re-cover pan and cook additional 10 minutes or until all liquid is absorbed.
4. Remove from heat.
5. Add any remaining spices, Splenda if preferred (amount to taste), stir, serve.
