Ingredients – Filling
One 8-ounce container low-fat soft strawberry cream cheese
One 16-ounce container low-fat smooth ricotta cheese
4 Tablespoons white sugar
Grated zest of 1 lemon
2 teaspoons fresh lemon juice
A few fresh strawberries, diced
Ingredients – Crepes
2 cups all-purpose flour
2 cups water
4 large eggs, well beaten
1/2 cup butter for cooking (may use non-stick cooking spray instead)
Ingredients – Sauce
2 quarts fresh strawberries
A little sugar and water
Instructions:

Batter: Mix filling ingredients together and set aside. Combine flour, water, and eggs for crepes (batter should be thin). Cook crepes in pan with butter or non-stick spray. Fill each crepe with about 2 Tablespoons filling.

Sauce: Combine sauce ingredients in saucepan and bring to a boil; simmer 10 to 15 minutes. Pour over crepes. Enjoy!
