Delicious low fat crepes recipe details
- Ingredients – Filling
- One 8-ounce container low-fat soft strawberry cream cheese
- One 16-ounce container low-fat smooth ricotta cheese
- 4 Tablespoons white sugar
- Grated zest of 1 lemon
- 2 teaspoons fresh lemon juice
- A few fresh strawberries, diced
- Ingredients – Crepes
- 2 cups all-purpose flour
- 2 cups water
- 4 large eggs, well beaten
- 1/2 cup butter for cooking (may use non-stick cooking spray instead)
- Ingredients – Sauce
- 2 quarts fresh strawberries
- A little sugar and water
Batter: Mix filling ingredients together and set aside. Combine flour, water, and eggs for crepes (batter should be thin). Cook crepes in pan with butter or non-stick spray. Fill each crepe with about 2 Tablespoons filling.
Sauce: Combine sauce ingredients in saucepan and bring to a boil; simmer 10 to 15 minutes. Pour over crepes. Enjoy!
