Delicate Stuffed Baked Potatoes recipe

Ingredients
4 medium | rooster potatoes |
2 tbsp | oil |
8 | spring onions, sliced |
50 ml | milk |
125 g | butter |
50 g | freshly grated Cheddar cheese |
salt and freshly ground black pepper | |
nutmeg |
Instructions
Brush the potatoes with oil and place on a lined baking tray. Bake in the preheated oven at 220°C for 50-60 minutes until cooked through.Lengthwise halve the potatoes. Carefully spoon out the pulp. Mix the pulp with butter, milk and onions. Season to taste with nutmeg, salt and pepper.
Spoon the mixture into the potato shells. Sprinkle with the cheese. Return to the baking tray and bake until the cheese is golden and melted.
Serve with fresh green salad.
