Deep fried spicy olive balls recipe details
Ingredients
cayenne pepper | |
1 tsp | thyme, chopped |
10 | sundried tomatoes in oil, drained and chopped |
100 g | flour |
2 medium | eggs |
salt | |
sugar | |
300 g | black olives, pitted |
4 clove(s) | garlic, minced |
1 | onion, chopped |
1 bunch(es) | parsley, chopped |

Instructions
Break the eggs into a bowl and whisk slightly with a fork. Sift in the flour and whisk until well combined. Add the olives, onions, garlic, tomatoes, parsley and the thyme. Season with salt, sugar and cayenne pepper and mix well. The dough should be pliable, if not, add more flour.In a deep pan, heat the oil up to 160°C. Shape the dough to little balls and fry the balls in batches until golden and crispy all around. Drain on kitchen paper. Spike the balls onto toothpicks and serve.
