- Ingredients:
- 1 cup boiling water
- 2 cups pitted dates, cut up
- 3 Tablespoons butter or margarine
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1 cup sugar
- 1 egg
- 1-1/3 cups all-purpose flour
- 1/2 cup chopped walnuts
Instructions:
This recipe was handed down from my grandmother to my mother. It is now served to guests at The Hummingbird Inn in Goshen, Virginia.
Preheat oven to 350 degrees. Grease an 8 x 8-inch square baking pan. Place dates, butter, and baking soda in a large mixing bowl and cover with the boiling water. In a second bowl, beat together vanilla, sugar, and egg; add flour and beat well. Add this batter to the date mixture, then add the walnuts. Pour into prepared pan. Bake 40 to 60 minutes or until toothpick comes out clean. Serve with whipped cream.
