Czech cauliflower soup recipe details
Ingredients
1 large | cauliflower, cut into florets |
salt and freshly ground black pepper | |
40 g | butter |
40 g | plain flour |
1 ½ l | vegetable stock |
1 pinch(es) | nutmeg |
2 | egg yolks |
100 ml | single cream |
4 tbsp | parsley, chopped |
Instructions
In a saucepan cook the cauliflower in salted water until soft. Drain.In a pan melt the butter. Add the flour and cook stirring until yellowish. Deglaze with the stock, stirring constantly with a wire whisk and bring to a boil. Cook for approximately 10 minutes, stirring frequently.
Add the cauliflower and purée the soup with a hand blender until smooth. Bring to the boil again, then take from heat and whisk in the egg yolks. Season to taste with salt, pepper and nutmeg.
Ladle the soup into soup bowls and serve drizzled with a teaspoon of cream and sprinkled with parsley.
