Curried garlic salmon on pasta recipe details
This is perhaps not so obviously a dish thrown together from what’s in the cupboard when one can’t be bothered to go to the supermarket! Canned salmon is given new life with a spicy curry sauce and served over pasta.

Ingredients
Serves: 2- 7 ounces dried penne
- 2 teaspoons Mussamun curry powder
- 2 teaspoons red curry paste
- 2 tablespoons (or more) Ketjap Manis (Indonesian soy sauce)
- Dash red wine vinegar
- 2 tablespoons butter
- 1 onion, chopped
- 4 cloves garlic, large-diced
- 1/2 pound canned pink salmon (de-boned and skinned)
- Olive oil
Preparation method
Prep: 10 mins | Cook: 10 mins1. Bring large pot of water to a boil over medium heat and add penne; boil for 7 to 8 minutes until al dente. Drain.
2. Meanwhile, make sauce by combining mussamun, curry paste, ketjap manis, and vinegar in a small bowl.
3. In a skillet over medium heat, melt the butter. Add onions and garlic and stir to cook for 1 minute, until aromatic. Cool for 2 minutes.
4. Add sauce and salmon to skillet with onions and garlic. Heat through for 1 minute, adding olive oil as necessary to make sure the mixture doesn’t dry out.
5. Add pasta to skillet when it’s done boiling and heat through. Serve and enjoy!
