Curd Cheese Jello with Strawberries recipe

Ingredients
250 g | curd cheese |
50 g | single cream |
1 tsp | vanilla extract |
2 tbsp | sugar |
3 tbsp | lemon juice |
2 tsp | grated lemon rind |
6 leaves | gelatin |
300 g | strawberries |
1 tsp | honey |
1 sprig(s) | lemon balm |
Instructions
Mix the curd cheese with the single cream, vanilla extract, sugar, lemon juice and lemon rind until creamy. Soak the gelatin in cold water.Dissolve the gelatin in 2 tablespoons of water in a bain-marie. Stir in some tablespoons of the curd cheese cream, then stir this into the remaining curd cheese mixture. Fill the cream into small cups or ramekins and leave to set in the fridge overnight.
Shortly before serving, wash and hull the strawberries. Purée half of the berries with the honey in a blender. Halve or quarter the remaining berries, then fold them in the strawberry sauce, together with the chopped lemon balm leaves.
Shortly dip the cups or ramekins into hot water, then turn out the curd cheese jelly on dessert plates. Pour some strawberry sauce over each jelly.
