Curd cheese dessert with sponge fingers recipe details
|1 kg||curd cheese|
|250 g||double cream|
|100 ml||lemon juice|
|100 ml||blood orange juice, freshly pressed|
|300 g||sponge fingers|
|200 ml||passion fruit juice|
|250 ml||single cream|
|2||oranges, zest only|
InstructionsMix the curd cheese and the double cream until smooth and well combined. Evenly divide the mixture into two bowls. Stir in one bowl the lemon juice and in the other one the blood orange juice. Check the taste and add sugar, as necessary.
Take two large and high bowls (approximately 1 litre) and layer in both bowls ¼ of the sponge fingers. Sprinkle each layer with 2 tablespoons of passion fruit juice.
Fill in each bowl a quarter of the blood orange cream and cover both with another ¼ of the sponge fingers. Sprinkle with passion fruit juice again. Cover each with a quarter of the lemon cream. Go on to layer sponge fingers, sprinkled with passion fruit juice, orange cream, sprinkled sponge fingers and finally the remaining lemon cream. Cover with cling film and place the bowls in the fridge for at least 3 hours.
Whisk the single cream with sugar until stiff. Fill in a icing bag and garnish the dessert with the whipped cream and orange zest.
