Ingredients
2 kg | leg of lamb |
5 tbsp | olive oil |
4 tbsp | cumin, ground |
2 clove(s) | garlic, minced |
4 | potatoes, peeled, diced |
2 | sweet potatoes, peeled, diced |
2 tsp | cornstarch |
2 tbsp | cold water |
Instructions
Rinse the leg of lamb and dry it with paper towels.Lay the lamb in a roasting pan and make 4 deep cuts in each side of the lamb.
In a small bowl combine olive oil, ground cumin and garlic salt; mix well.
Insert mixture into the cuts and spoon the rest all over the leg of lamb. Cover with aluminum foil and leave to stand for at least 2 hours.
Preheat oven to 200°C.
Bake for 30 minutes. Remove tray from oven and add the potatoes. Lower the heat to 170°C and bake for another hour.
Remove lamb and potatoes from the pan and make a gravy with the juices left in the roasting pan. Add the mixture of cornstarch and cold water and maybe some additional hot water until a thick gravy consistency is reached.
