Cullen skink recipe details
Ingredients
1 kg | haddock, smoked |
medium | onion, chopped |
900 ml | milk |
2 tbsp | butter |
250 g | mashed potato |
1 | bay leaf |
water | |
salt and freshly ground pepper, to taste |
Instructions
Place smoked haddock in a shallow pan, skin side down, and cover with water. Bring to the boil and simmer for 4-5 minutes, turning once.Remove haddock from the pan and cut off skin and bones. Break up the fish into flakes, return to the stock.
Add the chopped onion, bay leaf, salt and pepper. Simmer for another 15 minutes. Strain, and only remove the bay leaf. Add the milk to the fish stock and bring to a boil.
Add mashed potatoes and stir to create the preferred consistency. Add the fish and reheat. Just before serving, add small pieces of butter to the soup.
