Cucumbers with tuna cream and tomatoes recipe details
Ingredients
130 g | canned tuna |
50 ml | vegetable stock |
3 tbsp | lemon juice |
salt and pepper | |
1 clove(s) | garlic |
½ | onion |
5 tbsp | yoghurt |
2 | tomatoes |
1 ½ medium | cucumbers |
some | fresh basil or dill |
Instructions
Drain the tuna, place in a bowl and pick to pieces with a fork. Add the vegetable stock. Mix until well combined. Press in the garlic. Finely dice the onion and add to the tuna mixture. Stir in the yoghurt and add more vegetable stock, if necessary. Season to taste with salt, pepper and lemon juice.Finely dice the tomatoes. Cut the cucumbers in thin slices.
Evenly divide the cucumber slices on four plates, cover with tuna cream and finally with tomatoes. Garnish with chopped basil or dill.
Serve with fried potatoes.
